Carrot Latkes

Try this take on a Hanukkah tradition. Instead of the classic Potato pancakes replace it with the sweet carrots and you’ll enjoy them just the same way. A good alternative for diabetic people who have cravings for this dish.

Yields: Makes 4 Servings

Ingredients: 

  • 1 pound of Carrots, peeled and grated 
  • 2 Eggs 
  • 1 Scallion, finely chopped 
  • ½ Garlic clove 
  • Salt and pepper to taste 
  • ½ - ¾ cup Matzo meal (or breadcrumbs) 
  • ½ cup Oil (any kind of oil for frying) 
  • ½ cup Sour cream (for garnish) 
  • ¼ cup Scallion, chopped (for garnish) 

Method of Preparation:  


1. With the grated carrots place them in a sieve and press against them to drain the liquid in the               carrots and let them drain for 10 minutes and set them aside. 
2. In a large bowl, add the drained carrots, the scallion (but leave about 1 tsp. worth for garnish),             garlic, salt and pepper mix them until well combined. 
3. Add enough matzo meal (or breadcrumbs) into the mix. Until the mixture is firm enough to form         into pancakes. 
4. In a pan over medium heat. Use 2 tbsp. of the carrot mixture for each individual pancakes. Fry             them until golden brown on both sides. Remove from the pan and drain them on a plate lined with       paper towels. 
5. Garnish with the sour cream and the remaining scallions and Serve!
