The Vegetarian’s Counter to the Meaty-Meatball is this delicious and scrumptious Carrot and Feta Cheese Balls (Patties if you don’t have an oven). The sweetness of the carrot just mingles with the sourness of the feta cheese. They just taste amazing!
Yields: Makes 24 Balls
Ingredients:
4 medium Carrots, grated
1 ½ ounce Crumbled feta Cheese
2 tbsp. finely chopped onion
¼ tsp. Ground cumin
1 tbsp. Chopped parsley
1 tbsp. Dried oregano
2 Eggs 1 tbsp. Olive oil
½ cup Bread crumbs
Grated parmesan (optional)
Method of Preparation:
1. (If you have an oven) Preheat the oven to 400°F.
2. In a bowl, grate the carrots. Finely chop the onions and add it into the bowl
3. In another bowl, whip the eggs and add the parsley, feta, cumin, pepper and oregano and mix to combine.
4. Add the egg mixture, 1 tbsp. olive oil, breadcrumbs and mix.
5. If you have an oven you can now form the carrot mixture into balls and set them aside. But if you don’t have an oven you can form the carrot mixture into patties and set them aside.
6. Frying Version: In a frying pan on medium heat, add 1 tbsp. of olive oil as soon as you put the carrot patties in turn the heat to low to medium heat and lightly fry them 2-3 minutes per side. They will looks like hash browns at this point. But don’t fret! The end results will still taste amazing and even crunchier than the baked version!
7. Baking Version: In a muffin pan add a tsp. of olive oil in each muffin slot and spread the oil to cover the slots to prevent the balls from sticking. You can sprinkle the parmesan at this time (This is optional) and put them in the oven for 20 minutes.
8. After 20 minutes take them out of the oven and let them rest for 10 minutes before serving
9. Remove them from the muffin pan and place them in a bowl or a plate and serve!
